JAZZ™ APPLE PEANUT
BUTTER MUFFINS

INGREDIENTS:
1 diced and peeled JAZZ™ apple
2 tsp cinnamon
1/2 tsp salt
2/3 cup quick cooking rolled oats (not instant)
2 cup all-purpose flour
1/2 cup brown sugar
2 tsp baking powder
2 large eggs
1/2 cup unsalted butter, melted
1/2 cup milk
2 tsp vanilla
2/3 cup peanut butter chips
METHOD:
Preheat oven to 400°F
In a bowl, peel and dice JAZZ™ apple and toss with 2 teaspoons cinnamon, salt and oats. In a separate bowl, whisk together flour, brown sugar and baking powder. In a third bowl, whisk together eggs, vanilla, butter and milk. Stir egg mixture into flour mixture until combined, and stir in oat mixture and peanut butter chips.
Divide batter among cups in muffin tin and bake in middle of oven for 15 to 20 minutes, or until a toothpick comes out clean. Transfer muffins to a rack and let cool.
Makes 12 muffins.
