CURRIED JAZZ™ APPLE
CHICKEN SALAD

INGREDIENTS:

2 ENZA Jazz™ apples
2 cups (474 ml) shredded, cooked chicken breast
½ cup (119 ml) diced cucumber
½ cup (119 ml) raisins
¼ cup (59 ml) thinly sliced green onions
1 recipe Spicy Yogurt Dressing (below)
1 bunch watercress, rinsed and crisped
¼ cup (59 ml) chopped peanuts

METHOD:

Core and dice apples into ½ inch (1.25 cm) cubes. Combine apples with chicken, cucumbers, raisins and green onions in a large bowl. Toss mixture with Spicy Yogurt Dressing and mix thoroughly.

To serve, divide watercress springs between serving plates. Arrange salad mixture over watercress and garnish with chopped peanuts.

Serves 4

SPICY YOGURT DRESSING

1 cup (237 ml) plain low fat yogurt
2 tablespoons (30 ml) mango chutney
1 teaspoon (5 ml) curry powder

Combine all ingredients in a small bowl, stirring until thoroughly mixed.

Makes 1 cup (250 ml)
